Worth the effort
It cannot be denied that working with quinces is not easy – the initial fruits have to be picked from the prickly branches of the bushes. The fruits are ready when they are aromatic and have acquired the characteristic color of the variety – bright yellow or orange. Picking ripe fruits is very important, because then the most valuable substances are concentrated in them, and then the fruits are the tastiest. Quinces are very hard, so you will need to make an effort during cooking. It will be most convenient to work with a sharp knife and a kitchen board – each fruit is cut into 4 parts, then the core is cut out with a small knife. Then, if necessary, you can cut it into smaller pieces or slices on the board.
Quince juice and seasoning
Quinces can be juiced with an electronic juicer just like apples or carrots. At first, assess whether you can put whole fruits in it, or whether they will need to be cut into smaller pieces. The resulting juice is poured into jars or bottles and pasteurized. You can also make a sweet juice. Pour juice into the pot and add 100 g of sugar to every 200 ml of juice. Heat until the sugar melts. Pour into containers and cover.
